This week the team brewed Replacement Killer, our annual punkin’ celebration. While many pumpkins died in the process, it wasn’t in vain. They went to Valhalla under a bed of brown sugar to tease out some Melanoidins, and some straight-up caramelization. It helps gives ‘Killer a depth and complexity that we’re quite fond of.
